Some questions about FPS display and framerate

These may be some silly questions.
  1. How can I remove the FPS display on the top-left of the scene? Is it written in the Scene class?
  2. Why is the sample code you provide run at 100-200 fps but a empty project I built from the Engine Nine in VS2010 ran at 60 as maximum.

1. The FPS Counter is a XNA Component:
Components.Add(new FrameRate(GraphicsDevice, Content.Load<SpriteFont>("Consolas")));

VSync or you have Fixed Time Step.
// VSync
graphics.SynchronizeWithVerticalRetrace = false;

// Fixed Time Step
IsFixedTimeStep = false; // Tutorial Sample

// if IsFixedTimeStep is true then lock the FPS
TargetElapsedTime = TimeSpan.FromTicks(TimeSpan.TicksPerSecond / TargetFrameRate);
